io ho risolto passando da questa modalità di installazione:

certbot –apache -d assistenzapc.eu -d assistenzapc.eu

a questa:

certbot –authenticator standalone –installer apache -d assistenzapc.eu –pre-hook “apache2ctl stop” –post-hook “apache2ctl start”
